  1. Melt the butter and set aside to cool.Combine 2 tbsp water and egg yolks in a saucepan.Whisk for 30 sec .Cook over low heat whisking for 3 minutes at low heat until you get thick and foamy .
  2. Remove from heat and add cooled butter slowly little by little whisking well .Stir in orange juice and season with salt & white pepper.
  3. Note :I have used pangash fish fillet.Marinate fish with lemon juice and salt for 5-10 min. Cook until lightly browned with olive oil.
