Sharing Spicy Roasted Aubergine Recipe today. It’s an easy Recipe to prepare at home with smoked Baigan. This is a Bihari style preparation.

The scrumptious Bihari dishes are highly capable of tingling the taste bud of every foodie. The favorite dish of Biharis is Litti Chokha ,where Litti is made up of Sattu, Chokha is a mix of roasted egg-plant, tomato and potato .This delicious litti-chokha is now world famous.

Bihar is an extremely porous state , the adjoining state Odisha shares a similar culture too.

I am sharing recipe of Chokha where I have not used potato in it ,rather i added smoked green chilis to enhance the taste a level up.

Roasting Aubergine is though a regular affair at my home. In Summer it became a side-dish to the traditional dish “Pakhalo” .Pakhalo is typical preparation with Rice in Summer. Cooked Rice is soaked overnight to get the best result.

When you cook a spicy  Roasted Aubergine with some spices ,chopped onion etc that dish termed as Bharta. It is popular among North Indians .Bharta is usually eaten with Indian flat bread ,Roti.

  1. Roast Egg plant on gas stove top ,directly on the flame.
  2. Once it's done from all side ,place the egg-plant in a bowl and cover with a lid.
  3. Roast tomatoes ,green chili in similar way.
  4. Peel the skin of roasted egg-plant once it cool down and smash well with back side of spoon.
  5. Blend tomatoes ,chili,garlic coarsely .Add this paste to brinjal.
  6. Add salt, mustard oil and chopped coriander leaves . Squeeze lemon juice to it and serve with litti or sattu paratha.
